A delicious Caribbean meal prepared with very little added fat. Each serving provides 500 Calories and only about 5g fat.
1 pound of dry black beans
7 cups of water
1 coarsely chopped green pepper
1.5 cup of chopped onion
1 tablespoon of vegetable oil
1 clove garlic
2 bay leaves
1/2 teaspoon of salt
6 cups of rice cooked in unsalted water
1 tablespoon of vinegar
1 lemon cut into wedges
1 jar of sliced pimento
- Soak beans overnight in cold water. Drain and rinse.
- In a large soup pot stir together beans, water, onion, oil, green pepper, garlic, bay leaves, and salt. Cover the pot and boil for 1 hour.
- Reduce heat and simmer until beans are very tender (3–4 hours). Stir occasionally.
- Remove and mash about 1/3 of beans. Return to pot. Stir and heat.
- Remove bay leaves and stir in vinegar, when ready to serve.
- Serve over rice. You might garnish it with lemon wedges and sliced pimento.
